Aldehyde Oxidase

Aldehyde oxidase (AO) is a metabolizing enzyme, located in the cytosolic compartment of tissues in many organisms. AO catalyzes the oxidation of aldehydes into carboxylic acid, an action also performed by xanthine oxidase (XO) and aldehyde dehydrogenase (ALDH).

The aldehyde vanillin commonly used as a food flavoring is rapidly oxidized by aldehyde oxidase into the carboxylic acid vanillic acid.
